This is what an Indian spice box looks like. These are whole spices which are added to hot oil for tempering as the first stage of cooking.The spices are as follows counter clockwise :
Cinnamon sticks
Black Cardamom(below the cinnamon sticks)
Black Mustard seeds
Black Peppercorns
Bay Leaves
Cloves(below bay leaves)
Cumin seeds
Green cardamom pods.
White Urad lentils( these are used as a spice because they give a nutty flavour when browned)
Besides these spices there are others like dried red whole chillies,
Star Anise and Nutmeg(not shown here) which are also used in Indian cooking.
