This is a great picnic snack easy to prepare , carry and eat on the go.Goes well for breakfast /brunch too .This is like eating a cheesy Indian style omelette and toasted bread all rolled into one.
Ingredients :
4 slices of Multi grain bread
2 eggs
2 tbsp chopped coriander leaves
1 finely chopped chilli
1/4th tsp turmeric
1.4 tsp cumin pwdr
1/2 tsp pepper pwdr
salt to taste
2 cubes soft cream cheese
Oil for pan frying
Directions :
In a bowl break the two eggs.Add salt,pepper,turmeric,cumin pwdr,chopped chili,coriander leaves and beat together well with a fork .Spread the cream cheese on the slices of bread and cut into four slices as shown in the pic below.Heat oil in a frying pan .Coat each slice evenly by dipping in the egg mixture and shallow fry to a golden brown .Serve hot with ketchup.
So delicious, will be more than happy to have this for a lazy sunday brunch

By the way if you find difficulty in mixing the spice powder in egg directly..try this, take 1 tbsp milk, then disperse the Turmeric, cumin powder etc in it and then add the egg and mix.
