Peach and Mango Chutney

Peach and Mango chutney

This is a sweet and tangy chutney that goes well with a lot of Indian dishes and even as a side condiment for everyday meals .This is very simple to make and stays well upto a week in the fridge .I like it less sweeter than the average chutneys  but if you like yours sweeter add sugar as per taste.
Ingredients:

1 ripe mango peeled and cut into small pieces
1 ripe peach peeled and cut into small pieces
3/4 th  cup chopped tomatoes
1/4 cup tomato puree/sauce(NOT KETCHUP)
 2 tbsp white vinegar
1 tbsp sugar
1 tbsp organic Agave nectar (alternately add extra 1 tbsp sugar)
1/4 tsp cumin pwdr
1/4 tsp chilli pwdr
1/8th tsp garlic pwdr
2 tbsp lemon juice
zest of one lemon
salt to taste

Note :To zest a lemon ,grate the outer yellow rind of the lemon with a cheese grater taking care to avoid zesting the inner white rind which is bitter.the yellow rind has amazing concentrated flavors and oils which impart a lovely citrus aroma and flavor to a dish.
Directions:
Combine all above ingredients except the mango , peach, lemon zest and juice  and cook on a low flame for 10 mins. Turn off the heat and add the mango and peach pieces and lemon juice and zest ,mix well and cover to let the fruits break down in the acids of the tomatoes, lemon  and vinegar .Store in a sterilized glass  jar when cool and refrigerate for upto a week.
